I guess one of the perks of living in this small town is there are less than 10 places to go out to eat; now if the Chinese food wasn't so good, I think we'd be doing great! <br /><br />Anyways, I've been making a Mexican soup lately that would be pretty easy in the crock pot. Just add in chicken broth, black beans, corn, rotel, and some chopped up onions and garlic. At the end, I like to add in a little sour cream (or Philadelphia's Santa Fe blend cooking creme) to make it a bit creamy and I add in some cooked rice (I always add it at the end so it doesn't soak up all the liquid). Top it with some crushed tortilla chips and cheese and you're good to go. I also add in shredded chicken (you can throw some chicken breasts in the crock pot with a little water on a previous day and it is so easy to shred up).
