Oktoberfast

I guess we not really fasting. I was just trying to be clever :) But we're not eating out.

We've been wasting way too much money and I needed a reason to get to cookin' so we're eating in for a month.

So far so good! I know it has only been 4 days, but still. I've made squash boats with quinoa, pulled pork & tofu stir fry is coming up tomorrow.

This gluten free, vegan macaroni and cheese is coming up too. Sooooooo good!

I've also agreed to put meat on the menu twice a week. It's a good compromise because Hunter likes it and I get that, but cooking it makes me gag... So I choose things like pulled pork because you put it straight in the crock pot and you never have to cut it or touch it raw. Hurray!

Anyway, we're hoping to save a little money and get back on the budget bandwagon.

I thought I'd announce it for accountability. If anyone has any delicious crock pot recipes, please share. I'm loving that thing lately!

  2. I know what you mean about trying to cut back by eating out less! I guess one of the perks of living in this small town is there are less than 10 places to go out to eat; now if the Chinese food wasn't so good, I think we'd be doing great!

    Anyways, I've been making a Mexican soup lately that would be pretty easy in the crock pot. Just add in chicken broth, black beans, corn, rotel, and some chopped up onions and garlic. At the end, I like to add in a little sour cream (or Philadelphia's Santa Fe blend cooking creme) to make it a bit creamy and I add in some cooked rice (I always add it at the end so it doesn't soak up all the liquid). Top it with some crushed tortilla chips and cheese and you're good to go. I also add in shredded chicken (you can throw some chicken breasts in the crock pot with a little water on a previous day and it is so easy to shred up). Ok, sorry for the book of a comment!
